Summer fruit is my favorite!
Here’s a quick and simple fruit crisp, inspired by a recipe I got from Trader Joe’s a few summers ago that uses Trader Joe’s Vanilla Almond Granola for the topping. I make mine with very little sugar, so if you like a sweeter crisp, add more sugar.
Ingredients
3 baskets blackberries or blueberries
6 nectarines, sliced
½ cup brown sugar
½ tsp salt
1 box Trader Joe’s Just the Clusters, Vanilla Almond Granola
6 tbl unsalted butter, softened (1½ sticks)
Preheat oven to 350°
In medium bowl mix berries, sliced nectarines (I leave the skin on), sugar, and salt. Pour into 9×13 rectangular glass Pyrex baker.
In another medium bowl, use a knife or your hands to mix the granola and softened butter, forming large clumps. Sprinkle on top of berry/nectarine.
Bake until fruit starts to bubble and granola browns, about 25 minutes.
Tastes great served with fresh whipped cream or vanilla ice cream.
