This recipe is quick and easy. Use cucumbers, onions, and tomatoes from the garden.
Serves 8.
Ingredients:
4–5 tomatoes
1 large cucumber
6 oz feta cheese
¼ cup red onion
2 tsp oregano
1 tsp pepper, freshly ground
3 tbl balsamic vinegar
3 tbl olive oil
Method:
1. Cut cucumbers and tomatoes into bite-sized pieces.
2. Thinly slice red onion.
3. Cut feta into small cubes, about ½ inch pieces.
4. Place all into a medium-sized mixing bowl. Add spices, oil, and vinegar. Stir gently.
