Easy Grilled Pepper and Onions Burritos

These healthy, quick and tasty grilled pepper and onions burritos are a great way to use up the peppers and squash from the garden when there’s too many to eat.

Serves 4

Ingredients

  • 2 tablespoons olive oil
  • 2 red or green bell peppers
  • 1 onion
  • 2 tablespoons
  • fresh garlic
  • 1-2 squash, like patty pan or zucchini
  • 2 tomatoes
  • 1 to 2 avocados
  • 1 lemon or lime
  • fresh cilantro
  • 1 can black beans
  • grated cheddar cheese-optional
  • salsa-optional
  • whole wheat tortillas

Directions

  1. Slice avocados, chop cilantro, grate cheese. Open black beans, drain into a colander and rinse with cold water. Set aside.
  2. Remove seeds from peppers, slice into thin strips. Thinly slice onion. Thinly slice squash and tomatoes.
  3. Add olive oil to a medium saucepan, heat a few minutes and then add the garlic, peppers and onions. Cook on medium high heat for 5 minutes.peppers abd onions in pan
  4.  Once the peppers and onions are almost done, add the squash and tomatoes and continue to cook about 3 minutes more. turn off heat, and set aside.
  5. Assemble burritos: warm up tortilla briefly on the stove on a low flame. Place on a plate. Add grilled veggies, avocado slices, black beans, cheese, salsa, cilantro and fresh lime juice.

  1. That’s gr8! Well, I find the garlic cloves flavor very strong. Garlic salt quenches your craving for garlic and is not strong either.

  4. I prefer fresh garlic over garlic salt, but of course all ingredients can be revised to fit your needs. I enjoy this recipe because I like burritos, but this has less carbs, no rice and a lot less beans.

  5. I’m adding some garlic salt instead of garlic cloves, hope it’s fine, as I don’t wanna use garlic here directly…
