Broccoli–Parboiling and Freezing

The garden is producing more broccoli than we can eat, so I decided to freeze some to use  in bean dishes and soups.

Started by peeling the broccoli stems. Using a small knife, peel a thin layer of the outer skin off the bottom stems. Then cut the stems into small pieces.

Next, Cut the broccoli florets into pieces.

Boil a large pot of water, and add the broccoli. Let it boil for about 3 minutes, no longer.

Quickly remove the broccoli from the hot pot and put it in a bowl of ice water for a few minutes.

Dry it on towels.

Lay it flat on a pan and place in the freezer for a few hours to flash freeze. This will keep the broccoli from sticking together, so later when it’s time to use some, you won’t need to thaw out the whole bag for a few pieces.

Once the broccoli is frozen, place it in freezer bags, label and store for later use.
